Daddy Cooks: Roasted Sausages and Vegetables Recipe

Summer is fading into fall, the temperatures are coming down, and it’s the perfect time to turn the oven on and make a nice warm dinner.

This roasted sausages and vegetables recipe packs a bunch of earthy flavours into one pan, will give you nice smells and tastes – and not a lot of mess which is a bonus.

If you’re not into any of the veggies in the recipe, swap ’em out for others that you love. OR add some of your own and make the recipe even more filling for you and the family.

This one isn’t complicated, it’s one of my favourites and a staple in our meal plan, and you can definitely make it at home tonight!

Roasted Sausages and Vegetables Recipe

Ingredients

• Package of sausages (4-6 sausages)
• 3 medium to large Sweet Potatoes
• 1 medium to large Bell Pepper
• 1 medium to large Onion
• 2 medium to large Carrots
• 2 tbsp Olive or Vegetable Oil
• Salt
• Pepper
• Garlic Powder
• Paprika

Instructions

• Peel sweet potatoes and carrots.
• Chop all vegetables into bite sized pieces.
• Add chopped vegetables to large mixing bowl. Add oil & mix well to coat veggies.
• Sprinkle on salt, pepper, garlic powder, paprika and mix well.
• Put vegetables on a baking sheet or in a roasting pan in a single layer (or as close as possible) and put in oven for 20 minutes at 425°F.
• At 20 minute mark, mix/flip veggies on tray and place sausages on top of veggies, return tray to oven, set timer for 25 minutes.
• Remove tray from oven and check sausages (cooked at 160°F) and veggies. If needed, return to oven for 5 minutes and check again.
• Serve with your choice of dipping sauces and enjoy!
