Brunch is here, and it’s never going away. But if you don’t want to stand in line at a hot spot to overpay for your meal, I’ve got something for you here.

The Irish Nachos recipe is one of my favourites because I love nachos. It’s that simple. This brunch dish is a pub food delight that you can make at home, add as many healthy veggies as you want, and enjoy with coffee, juice, or Baileys, a Caesar or a mimosa. Hell, have a beer or a cider if you want – it’s brunch!

These Irish Nachos are easy to make, customizable, don’t take all that long, and are highly shareable (or you can keep them all for yourself).

Brunch Time Irish Nachos Recipe

Ingredients

• Waffle Fries
Nacho Toppings of Your Choice:
• Red Bell Pepper (diced)
• Cooked Bacon (chopped)
• Cheddar Cheese (grated)
• Green Spring Onion (diced)
• Tomato (diced)
• Jalapeno (diced)
• Red Onion (diced)
• Etc.

Instructions

• Bake waffle fries in the oven as directed.
• While fries are baking, cook bacon & prep toppings.
• Spread 1 layer of slightly cooled waffle fries onto baking sheet, cover with grated cheese, bacon pieces and veggie toppings. repeat with 2nd layer.
• Bake at 450°F for 3 to 5 minutes or until cheese is melted as desired.
• Serve with your choice of sides (salsa, sour cream, creme fresh, ranch dressing, guacamole, etc.).
