Daddy’s Favourite Chocolate Chip Cookies πŸͺ

I learned to bake in the kitchen at my mom’s house using Jean ParΓ©’s Company’s Coming cookbooks. And my most used, seared into my brain favourite chocolate chip cookie recipe is the Chocolate Chippers on page 23 of the Cookies cookbook.

Admittedly, I haven’t baked these cookies (or much of anything) in a long time. But, there was a time when baking was one of my favourite things. Now, eating baked goods is still one of my favourite things, and I’m wondering if I should be baking more myself, and then teaching Ollie to mix and help and be involved in the kitchen when he gets a little older and more able.

As I thought about creating this post and sharing my love for this recipe with you all I searched and searched for the original Chocolate Chippers recipe I remember baking. I found a couple posts that seemed right, but didn’t quite match up. I found an awesome, updated version of the recipe – Decadent Chocolate Chippers in Company’s Coming Cookie Jar ClassicsΒ that has even more chocolate pieces in the recipe.

No more preamble, here’s the recipe as presented by Jean ParΓ© and her team (with a couple notes from me).

Company’s Coming – Chocolate Chippers Recipe (Company’s Coming Cookies pg 23)

Ingredients

πŸͺ Butter or margarine, softened β†’ 1 cup / 250 ml
πŸͺ Brown sugar, packed β†’ 1 1/2 cups / 375 ml
πŸͺ Eggs β†’ 2
πŸͺ Vanilla β†’ 1 tsp. / 5 ml
πŸͺ All-purpose flour β†’ 2 cups / 500 ml
πŸͺ Cornstarch β†’ 1/4 cup / 60 ml
πŸͺ Salt β†’ 3/4 tsp. / 4 ml
πŸͺ Baking Soda β†’ 1 tsp. / 5 ml
πŸͺ Semi-Sweet Chocolate Chips β†’ 2 cups / 500 ml
πŸͺ Chopped walnuts β†’ 1 cup / 250 ml

Directions

πŸͺ Preheat oven to 350Β° and grease two (2) cookie sheets. *

πŸͺ 1. Cream butter and sugar together. Beat in eggs 1 at a time. Add vanilla.

πŸͺ 2. Stir flour, cornstarch, salt and baking soda together and add. Stir in chips and nuts. Drop spoonfuls onto greased baking sheet. Bake in 350Β° F (180Β° C) oven for 10 to 15 minutes. Makes 5 1/2 dozen.

πŸͺΒ Let cool 5 to 7 minutes before removing baked cookies from sheet and preparing next batch for baking. *

πŸͺ Use four (4) cookie sheets instead of two (2) to bake twice as many cookies at a time, while still giving cool time and prep time for faster batch-after-batch baking. *

Company’s Coming has a ton of cookbooks that you should look at if you love cooking. And they aren’t paying for that endorsement, I just have always like cooking and baking with them.
